Auberge Pyrénées Cévennes Paris Reviews from The Last Year
Good food !
We had dinner with friends and were not disappointed. A slightly old-fashioned setting, in its original form but the essentials are on the plate. Boiled eggs with mayonnaise cooked to perfection, delicious mayonnaise. Frisee with soft-boiled egg bacon very good. Then very soft veal blanquette. Prawn risotto a delight! To finish, very good rum baba, Paris-Brest a must, soufflé also very good. The only slight disappointment was the millefeuille, the cream of which was cloying but the flakiness excellent. Indeed the wines are expensive, you have to analyze the menu carefully before choosing. A good address for successful classic cuisine that we enjoyed. Very good value for money. Efficient and friendly service.
Authentic & Delicious French Cuisine
The lunch was most delicious, we ordered cassoulet de l'auberge, black rice and scallop. It is highly recommended. The place might not be easy to find and from outside the sign is not visible but it is worth visiting.
Beautiful Food
This is a great restaurant. Excellent service. Beautiful food. We did the tasting menu with wine pairing. Without exaggeration this was one of our best dinners in France. Surprise at the end was a perfect souffle paired with a very interesting wine! Bravo. …
I would skip this one
Food lacked flavor. It was just not good. The French can do so much better. The escargot was missing garlic, the cassoulet just had no flavor, and the cheese was cold. Prolly worst meal I had in France.
Celiac flee, gourmets hesitate, poorly guided tourists, sorry but continue
Familiar with the old house, I have just experienced a dinner with friends, which turned from a friendly welcome to a meal inconceivable in the 21st century: - Order gluten-free sweetbreads, interpreted without breadcrumbs, but served floured; coeliacs flee this house! - In the meantime, a frantic hunt for moths which are much more numerous than flourless sweetbreads! - Request for unfloured sweetbreads, at the cost of an additional 20 minutes of waiting... I ordered an omelette! - At dessert time, when I was hungry, I asked for a soufflé, ordering in advance did not seem necessary if the sweetbreads had been edible..., there is gluten-free ice cream, was the waiter's remark, without a doubt was it very poorly appreciated! - A plate of cheese without bread then? There is no more cheese, we were robbed on Saturday evening!!! Incredible for a start to the week for Monday evening dinner!!! Yet without an announced strike by cheesemakers, nor by the central purchasing offices of the Rungis cheese factory! - The bill then? Brought with 2 sweetbreads for €49… look for the mistake… or who are we kidding? - Not an excuse, not a visit from the boss… In short, I wanted to make another attempt at this tourist den overrated by Michelin and Gault et Millau - I left with a heavy bill, an upset stomach and a crazy desire to run to the McDonald's at the end of the street to feel satisfied! It's incredible and demoralizing to see how an extraordinary table run by chef Daniel Constantin and Françoise turned into a trough "managed" by a communications champion, absent from the room and so far from the abandoned culinary tradition. at the departure of the previous leader! The new one is more present by the sin scooter alarm parked opposite the restaurant and the triggering as sensitive as my intestinal goblet cells to gluten and which make life so polluted with noise and other inconveniences. Sorry Bala and Doudou, but this evening I have the feeling that I didn't eat my fill of dinner, but that I ate shit... as Master JP Coffe would undoubtedly have described it.
Pay attention to the price of wine by the glass.
Excellent traditional French restaurant with specialists like blanquette or cassoulet. Certified period decoration and furnishings. Will appeal to Parisians and tourists. Both will quibble over the amount of the bill propelled by the €20 per glass of wine.
Underwhelming and disappointing
I’m sorry to say this was very under whelming for what you’d expect, being Michelin restaurant. The service was poor, whilst we were seated straight away, we then waited 25 mins before being asked for our order. Food came out in good time, but was not anything special. The entree off porcini mushroom lacked flavor, the snails were good. The sweetbreads were good, but the rib eye steak was tough. The desserts were ok. Just expected a bit better, more attentive service and better than average food for the price. Overall an underwhelming experience.
Very good classic French cuisine
Very good classic French cuisine (veal blanquette and entrecôte with pepper sauce), particularly successful soufflé dessert Menu with excellent value for money Bistro style setting Good service
Truly delightful
We have been lucky enough to get an air BnB above the restaurant so it made sense to try the food. From the outside you wouldn't know how happy you are going to be at the end of the meal, so I'm really glad we went in. We managed to get what I think might have been the only table of two that hadn't been booked. I had the pate en croute and my wife had the assiette of pork. She very much enjoyed the cuts of pork sausage and cured ham - I tried some of each too and thought they were fantastic. The pate en croute was so good it's ridiculous. So perfectly cooked and seasoned. I could honestly eat that every day for the rest of my life and be delighted every time. I had a blanquette of veal next that was such a perfect mixture of salty, creamy and sour I was mopping up the last of the sauce with bread. The veal was perfectly cooked of course, it came apart with ease, but certainly wasn't the "falling apart" tender that some people think is the sign of a good braise. This was cooked to the absolute perfect point and then stopped. It couldn't be better. I finished my meal with a beautiful Paris brest, possibly the best I've had. The waiting staff were fantastic too. Just the perfect amount of attention, happy, polite and unobtrusive. As a Chef myself I'm trained to find fault so it is difficult to eat out, but this meal made me so happy! I had to write this review the same evening that we had our meal. I can't sing this restaurants praises highly enough! Truly delightful.
Tourist trap - Not OK at all for a restaurant mentioned in the michelin guide etc.
The food was fine, (not special, but definitely ok), but unfortunately that's all. We attended with a (quiet) child and were put in a corner, far from the other tables. When we asked for a glass of champagne (at the express suggestion of the restaurant), we were given no options. Upon receiving the bill, we were charged 23EUR per glass, an absurdly high amount. Not only did they claim that only 'Ruinard champagne' was open, they were unable to show the bottle. This is pure tourist deception. Fraud. Besides a dessert for us, we asked for 1 scoop of vanilla ice cream for our son. We were charged EUR 13 for 1 scoop with no extras. The interior was corny. After all, they had the nerve to mention that tips were welcome... However, they had already received a lot of tips thanks to tourist deception. Unworthy of a BIB gourmand mention.

This app is a catfish and overrun by people programming “bots” and algorithms. It makes it frustrating for someone not well versed in this to have any movement. I thought this would be a fun side hustle, but unfortunately it’s become like any other “side hustle”. Don’t waste your time with this crap. Not a question, just a suggestion. Also don’t pay these fake “gurus” hundreds of dollars to teach you. Might as well sign up for a software class. 😕

Might depend on what market you're in? Some have not been developed yet and some are still growing. Make some reservations ahead of time and post them for sale and get ahead of the bot bids? IDK.

I totally agree with you. I’ve had the same thought and issues. But there’s no way to stop it as far as I know, unfortunately. I was worried this was going to happen and apparently it has😞
