It's rare to find a truly excellent restaurant in a hotel. And if you do it typically has prices that are way out of line with other restaurants of similar quality. Top of the V is an exception - and exceptional. We started with a couple of excellent craft cocktails from their cocktail menu. Creative and delicious. $16-18 seems to be the new normal for these kinds of drinks on the West Coast. A bit steep, but a worthy investment accompanied by friendly bartenders. We started the meal with a rare treat in the US, Jamon Iberico. It's available here in its pure state and for a bit less a 75% Iberico. This means that the pig it came from was not of full Iberico genetics. We opted for the 100%. $35 gets you a plate of finely sliced slivers of Iberico. We hadn't had any since last year when we were in Spain (and it's EVERYwhere there). An indulgence to be sure, but oh-so-delicious. My only criticism here is that it is completely ala-carte. Typically when you get it in Spain it is accompanied by tomato bread - a crusty bread smeared with delicious fresh tomato puree. We ordered some Spanish cheese to go with it and it came with membrillo (quince paste) and a few slices of bread. From there it was the octopus with potato foam. Perfectly charred and tender octopus is accompanied by the lightest potato product you'll ever see. Any lighter and it would have floated off the table. We both swooned at this dish. Absolutely delicious. Next up was beef cheek with paquillo pepper puree. The cheek is one of the most coveted cuts from both beef and pork - it's wonderfully tender and resembles a slow-cooked short rib (only even more tender). This dish did not disappoint. Unctuous! We had the chocolate pot de creme for desert and it was wonderful. Service was friendly, although a bit slow - but that's the Spanish way. In Spain, for example, you have to literally tell the staff that you're finished or they will let you sit there all night.
