Chef came in with the heat today on some real shit.
First time trying Elk I give it some slight, like a 7.2. Chilean sea bass was hittin though. I didn't know you can make sea bass Mexican but chef most definitely knew what he was doing. Flank steak was aight. Like I'm not jumping down after taking a bite you feel me. Overall rating: 7.36.

We have enjoyed Chimayo many times and it is always a wonderful meal. The complex and layered flavors, the spicy drinks are all amazing! Service is top notch (thank you Kat!). No visit to Park City is complete without a visit to this wonderful new-Mexican temple of food!
I will always remember the Chimayo from 2009.
Amazing food and reasonable prices. They were still having to establish themselves. Now, they are a shell of that restaurant. The food could be good, but often there is something wrong with a given dish. For instance, rare does not mean the same thing as cold and uncooked. And I won't comment on the prices. Yes, it's Park City, but the food just isn't worth it at these prices.
One of my highlights in Park City!
I was a regular visitor to Park City 10 to 15 years ago, and during those visits I discovered my favourite restaurant in the Main Street, called Chemiyo. On my July 2024 trip to Park City, the very first thing I did when I arrived last night was to book dinner at Chemiyo, and I wasn’t disappointed. I ordered the avocado salad for my starter, and the duck enchiladas as my main. It was healthy and scrumptious, and although the price tag matches the quality of the food, the servings were so generous that I was able to take leftovers home for lunch today. Although I considered eating somewhere else tonight for variety, in the end I decided to return to Chemiyo. It’s my last night here and may be a few years before I return. Again the food was delicious….yet even surpassing the quality of the food was the ‘above and beyond’ they showed me. My server came up to me after I’d ordered, and she told me how much the chef appreciated me coming back. In a completely spontaneous gesture, they offered me a complimentary starter and dessert. In my life, I do so much for so many people. To have someone give back to me in such a thoughtful way really touched my heart. Thank you to everyone at Chemiyo, and particularly the chef. I can’t wait to return on my next visit, and you will always be at the top of my list of places to eat in Park City.
Dinner at Chimayo was fantastic.
Our server Mike (17 veteran) was all over it. I had the Buffalo Flank Steak. The mushroom and green bean sauce was on point, the tres Chile scalloped potatoes were a nice complement to the Buffalo Flank steak, which was served at the exact temperature that I request. So flavorful and tender. My spouse had the Halibut special and enjoyed every morsel. The bread basket and dipping sauce hit the spot. Arturo's Tortilla soup has just the right amount of spice and was full of flavor. The stuffed avocado salad was a delight. The Pomegranate Margarita had all the flavor one could expect in a drink. The Sangria was light and refreshing. Finally, do yourself a favor and get the Berry Taco for dessert. We were celebrating a big anniversary and Mike and Chimayo were kind enough to treat us to that dessert. The GM came by to check on our meals and even helped clear the table. We thoroughly enjoyed our evening and the entire team at Chimayo should be applauded.

The soup sampler is fantastic (corn soup the best). Also enjoyed the trout and the scallops. Highly recommend!

Chimayo has a special place in my memories because 5 years ago I was proposed to right after eating here. We came back this visit to celebrate. A beautiful fountain right outside the entrance can provide great entertainment for children while waiting for food. :) As with all of Park City, prices are steep. It's easily the most expensive Mexican restaurant I go to. Most entrees are in the $50- $60 price range. Despite the steep prices, Chimayo is a great place to eat. The service is great and the food is quality. The wagyu beef fajitas were easily the best fajitas I've had in my life. Freshly made tortillas with beef cooked perfectly on top of a delicious bed of melty cheese and veggies. The sauce on top was umami central. This was a special menu item, and I highly recommend ordering it!! The scallops were cooked perfectly, the beet salad was refreshing with lovely sugared pecans, and the potato served with the wagyu sirloin was also the best potato I've eaten in my life. The skin was crisp and salted, so I happily ate the whole thing. The bathroom is downstairs and is clean and decorated. However, a diaper changer is missing and would be appreciated by parents.

It really depends on what scale you use to evaluate high end restaurants when comparing reviews. That is why Chimayo, and all the high end places on Main must be compared to each other, not what you can get near you if you live in or near major cities. For instance, in San Diego area, this place is a 3 star driven primarily for price to food quality and wine list. It is 4 in Park City because they get a lot right, like service and presentation of dishes. The watermelon salad came with sour cucumbers so I manned up and sent it back. It took a while, but apparently the chef agreed and sent out a plate of cucumbers. The fact that I was already 3/4 done the salad, with a pile of cucumbers on the side of my plate, seemed not to matter. The surf and turf came with underwhelming shrimp on top. The potatoes on the side were a little greasy. The elk was very good as was the potato augratin side. Without that dish, this place rates a 3.

An array of items not typically seen at a southwest flavor restaurant. Trout, wagyu beef Fresh ingredients and aromatic smells. Really enjoyed the meal

We were seated promptly and no complaints for the servers and hosts. I'm giving this 3 stars for the food. We ordered the following dishes: - trio appetizer (5/10) - lacked flavor; dips should be in ramekins; guacamole was runny. - special of the day (Wagyu fajitas) (7/10) - meat was good. - duck enchiladas (5/10) - dry and lacked duck flavor. - corn soup (9/10) - churros (2/10) - filled with cream cheese which made it overly sweet. - sangria (7/10) - kinda water down Our server and hostess were nice, but the food was just ok. With all the restaurants on Main Street and the prices at Chimayo, I'd expect more from this place.
Amazing.
We had the ribs and the elk. The food was phenomenal with fantastic flavors throughout. I'm not a foodie, but Chimayo rocked it. Great portions too. Make sure you go. I'll fly out again just for dinner.

We put our name on the waitlist for a 2-3 hour wait where the latest we would be sat was 8:30pm, sure no problem. We don't hear anything at 8:30 so we walk back over to see how much longer it would be, the hostess was extremely opinionated and told us that "most people make a reservation for the time they want to eat". Obviously, we just wanted to dine here and were even willing to wait. She then told us we could "make a reservation" for 9:15.... It was now 8:45, so we decided to do that. We went to grab a drink at Alpine Distillery, and then got a call at 8:59 that our table was ready and she would hold it for a minute.. after some discussion with coworkers she said she could hold it for 5-10 minutes and we asked if they could just honor the 9:15 reservation, she said sure. Anyways, on to the food. Everything was absolutely horrible. 3/4 of us didn't eat more than 1/3 of our entrees. We took it home because we don't like food waste. I don't remember a single notable dish that we ordered and we all collectively lied to the server about how everything tasted because it was 10:20pm and none of it was particularly her fault because at this point our time was money and it's time to just move on. We tipped her generously and went off on our ways. How is this a highly recommended place in Park City? The entire experience was so sad except the wine, and that has nothing to even do with the actual restaurant except the fact that they had to stock it and open it. Ambiance was something I could appreciate with lots of woodwork and metal-work purportedly from Mexico.
Best restaurant in Park City… and I’ve been to all of them
It baffles me that not everyone has given Chimayo five stars. I have been to every single restaurant in Park City for the past several years, and nothing gets close to comparing to Chimayo. -service: the restaurant is managed by Julie, which is no questions asked the best person all around. She runs a tight ship, excels with customer excellence, efficiency, etc - food: you’ve got to know what to order. Apps: queso or Ceviche Salad: avocado salad Main: ribs or duck enchiladas Desert: churros -ambiance is amazing… try to sit upstairs Lux margaritas are great as well If you can get in, trust me… GO!

Service was, too. It ends there. I wish we read reviews before we went. A few reviews explained our exact feelings and experience-the trio appetizer was blah with a cold queso, guacamole that tasted like grocery store avocado spread. The elk was just OK. If the price of everything was half it would have felt like you got what you paid for, but it was 2 star food at 5 star prices. Won't go back and won't recommend
Disappointed
Having been to Chimayo in the past I expected better. When the server brought our plates, he didn’t know who got what plate and had to ask each of us individually who got what. There were only six of us so it’s not like we were at a table of 15 or 16. My $65 Seabass was the size of a large scallop and the taste was mediocre. We didn’t expect to have to box our own leftovers when the bill totaled $750. The service left a lot to be desired and the entrees were way over priced. Save your money, and go somewhere else.

The menu and service at Chimayo is first class. Many interesting food choices and presented beautifully. We loved the iron chalices for water and the spacious room for tables which is unusual for Park City. You must make a reservation ahead of time to enjoy this restaurant but you won’t be sorry! Delicious!!

I was a little disappointed though to be fair the restaurant was packed. The service was attentive but rushed, we were seated at the most poorly lit table in the room in a congested area, downstairs. The starters, especially the soup, was delicious. My main course however was a blah mess, seemingly a play on chiles rellenos. Effort had been made to gussy it up with herb stems and I guess what were colored toothpicks, but simplifying the dish would probably yield a much better result. Same for the sides. For the price, I'd expect more.

Delicious meal once again at Chimayo. Attentive friendly staff that was welcoming and never made us feel rushed - but boy, can they turn over a table! Very efficient professional staff for a very busy restaurant. You definitely need a reservation! The cilantro bread oil served with focaccia bread was delicious! They’ll actually give you the recipe and it’s something I’ll be making at home. My husband and I split a salad, which would have otherwise been a very large portion. There was no issue with sharing the salad and it arrived plated for two. I had mushroom enchiladas as an entree which was delicious and could have totally been enough. Our waiter steered me to the chile relleno as an add on to the enchilada but it was honestly too much and not what I was expecting - heavily fried and thick cheese inside. Way too heavy for my taste. I should have gone with the cerviche or the tortilla soup, both of which looked delicious as they went by to other tables. My husband’s trout fajitas were delicious and could easily have been split. Flan for dessert with blood orange and figs was light and delicious. Margarita also great!

We had been to this restaurant last year in a blizzard and the crown of ribs was amazing. This year I would have to say it's even better than I remembered. First, the restaurant is busy so MAKE RESERVATIONS 3 or 4 days before you want to dine. Even with that you might get 4:45 or 8:45 if you are lucky. Next, the service is impeccable. Our server (I wish I remembered her name ) was friendly, casual in the most perfect way, professional and knew her menu. They put bread and this amazing dip on the table that is impossible to resist. Knowing what I know I would order an appetizer and share the crown rib. Then, you might have room for dessert. The chef has been there for 1/4 of a century!! And he is a master. Every meal we saw looked awesome but have the Crown Ribs you won't regret it and I would say one of the best meals in my life....
Second time here and it only gets better.
Staff and ambiance great. Food is flavorful and creative. We got the duck enchiladas this time and it was not an ordinary enchilada. Full of flavor and the piece of duck leg was crispy and delicious! The beet salad was bursting with flavors. The pomegranate seeds and pecan added to the salad. Dressing was perfect for the combination.

If you get the ribs you could definitely share that with one or even two more people. The service is good but a bit slow but it was very busy. So let's cut them a break. Plus they were all really nice! The decor is classy with a Mexican vibe. Enjoy!!!

We dined here several years ago on a trip to Park City and wanted to return again. It was the Thursday night of the beginning of Sundance so we only had a prix fixe menu as a choice but it was amazing! There was so much food we couldn’t finish it. The ceviche is so amazing, the flavors are perfect. The presentation of the dishes were fantastic and the margaritas were on fire! We had a lovely server who was very honest and shared her likes and suggestions with us and she was spot on. The ambiance and vibe here is just very vacation-dreamy and makes for a great evening after skiing or heading out to see a film. We will be back!

It is super expensive, so be prepared. We ended up sharing a bunch of appetizers and a salad and one main. The wild mushroom quesadilla and goat cheese stuffed poblano and ceviche were all amazing. The margaritas were great, too, but we were there during Sundance and they gave us special margaritas--I think the price was the most special part of it.

I think this place found a niche in Park City by providing average Mexican food with good presentation and above average ambiance and service. But I can't rate them highly because the price/quality ratio of the food is so grossly off. They start off the meal with some cold bread and a creamy, avocado dip that no one at our table liked. Margaritas had very little if any alcohol. Also tasted like they used a pre-made mix. The Trio appetizer has a not freshly made guacamole with some hummus and a liquid cheese with chip/vegetables. Why is a Mexican place serving hummus? Not sure but it was not very good. Queso dip came out somewhat cold so the cheese was not fully melted. Strangely came with some below average pita bread. Avocado salad and soups were pretty good, no issues. Enchiladas, both vegetable and duck, were unremarkable. I know you may be tempted to go here to get your Mexican fix but you can find places that are so much better in Park City.

Food is below average and not worth the hefty price tag.
The service was also below average. For how much you are paying, they barely tend to you and had to ask for refills of water several times. Ordered margaritas as well which were terrible. Last thing I will say is the "Mexican/Spanish" food was very questionable as it did not represent hispanic culture at all.
Consistently Great Meal
We always go back to Chimayo when in Park City. Great atmosphere and a fantastic meal. Started with the ceviche which was just delicious, perfect marinade of lime, cilantro and spices. Our entrees included the Buffalo flank steak and the elk london broil, neither of which you will find on the east coast. Both meals and their accompaniments were standouts as fantastic. Our waiter, Tyler, was attentive and efficient. Must go to restaurant when in Park City!

We love Chimayo! We've gone a few times over the last few years and the food and service are consistently outstanding. Highly recommend the duck enchiladas, queso appetizer, trout fajitas, and the sparerib tower. Also the fondue for dessert. This was a highlight of our trip!

Very nice food and menu. Been there forever and super reliable albeit quite expensive but then everything in Park City is. Nice service and have been there many times.

Hi, I have a reservation to Nobu Malibu, but since they don't do text or e-mail confirmations I haven't been able to get my reservation posted. I have posted a screen shot of the phone conversation on the listing, but it keeps getting rejected. If anyone has an idea how I can get it approved that would be much appreciated, thanks!
