Excellent
The entire experience was top notch. Dom and Luke , and are waiters, went above and beyond-excellent food and fantastic service. The pastas and halibut are excellent, and the soufflé for dessert is a must. The ambience was nice and we really enjoyed our evening. We will be back !

I took a group to CUT and had a great time from start to finish. The reservation process was easy, handling 10 people in the main room without the hassle of a contract or side room ordeal. They sat us facing the kitchen and we had great service. We also had amazing food. From the start, when I had oysters waiting for the rest of my group to arrive, things went well. We shared multiple orders of duck agnolotti that was amazing. There was a lobster cocktail. There was butter lettuce. I split a bone in ribeye with one of our party and it was perfectly cooked and basted in butter. The table side chimichurri was excellent to watch and eat. The sides were amazing. The seamless service and wine were amazing. It was truly a special evening to share as a group. They had no problem helping with kids, including one highchair and making a side an entree for a little one. it was expensive, but reasonably so for what we received in excellent food. I would happily come back again.

I have eaten at and reviewed Wolfgang Puck's Cut steakhouse n Las Vegas several times I have always found it to have a variety of superb steaks, inspired sides dishes, an extensive wine cellar supported by excellent Sommeliers and solid to outstanding service. I made reservations at the Cut location in Washington DC (Georgetown) location with similar expectations. I was WRONG on almost every count. The menu is drastically reduced, only a few of the better steaks is on this enu and none of the best of the best sides I enjoyed at the Las Vegas location are on this menu (they offered five sides, the truffled fires were good; the mushrooms mediocre). The wine cellar is paired back but the price are ridiculously high. Most of the standard 750 ml bottles are priced at $500 and higher, and many are priced over $1k. The Los Vegas location also had many of these 'once in a blue moon' types of wine labels; but they also offered multiple excellent wines at a more reasonable price point. The wine I chose, Stag's Leap Artemi, was priced at almost twice the price at comparable steakhouses in DC. I was very disappointed, and not terribly surprised, to hear that they had "run out" of this "very popular label". LIttle surprise since it was one of less than 5 American Cabernet Sauvignon bottles under the $500.00 range. Fortunately the sommelier was able to recommend a comparable label; he was truly knowledgeable, professional and courteous! The service was otherwise indifferent, the recurring excuse was "we are busy" since it is a Saturday evening. My advice, stay away from the DC Cut. It is NOT comparable to their Las Vegas location and this experience caused me to cancel an upcoming reservation at Cut in Los Angeles.

Food and service were great, but maybe overpriced. We got the tuna tartar and pumpkin tortellini- these were amazing and i would order this every day and pay double if i could. The wine was nice. The bread and butter was out of this world good and i wish i had more than one roll. The crab fried rice was mediocre, just don't bother. The rib eye was good but overpriced. The mac and cheese was good, nothing spectacular but nothing bad about it. The sorbet was delicious. Definitely will come back and order the appetizers but will not get the same main courses.

10/10 meal. Blue crab rice was so delicious we ordered two. Mushroom dish to die for, tortellini impeccable. Finished with baked Alaska and Chocolate Soufflé. Outstanding service and meals. Highlight of our trip to DC and Georgetown

My husband selected this for his birthday. First, we were seated right in front of the kitchen so every server had to walk by our table, outside the main dining room, almost a hallway. We made the reservation about 4 weeks in advance. We did not feel part of the restaurant. It took at least 20 minutes for our server to take a drink order. Having to wait, I had no choice but to watch what was going on in the kitchen. I saw a server bring a chocolate frosted whole cake go to a table behind me with "30" candles on it. After it was presented, the cake returned to the kitchen, and 2 slices went to the table. Throughout the evening , about 2.5 hours, I saw slices of cake, with the back frosting cut off, go out to tables. I did not see cake on the menu. It's kind of yuck given Covid . Did someone blow out the candles and spit all over the cake? I certainly didn't think it should be served to other guests. When we finallly got our menus, I asked about the duck and how it was prepared, our server snapped at me and said they were sold out for the evening. It was 6:50pm. When our server returned with my husband's cocktail, I asked if in the future we wanted the duck, did we need to request when making a reservation. He softened his demeanor, realizing he was rude at the beginning. With the duck not an option, steak was the only choice. We ordered a tomahawk. We had the rockfish ceviche and prawns as appetizers. Both were very good. The server came and prepared a chimichuri sauce table side. The steak was cut at the table and the presentation was nice. It came with delicious potatoes and we ordered a side of spinach. The steak was so disappointing. It had no flavor itself. The chimichuri sauce was good but the steak just tasted like melted fat. My Costco prime rib eye grilled on my Weber gas grill is way tastier and a lot less expensive. We ordered a souffle, which was tastey but under cooked. Our bill was $350, one drink and two glasses of wine. A very unimpressive meal , mediocre service and the least desirable table. As curious I am about the uck, I won't go back.

My husband and I went for dinner almost two weeks ago after the restaurant recently re-opened and it was phenomenal. The unparalleled level of service, ambiance and welcomeness from the staff was great. Food and drinks were promptly served and the presentation was beautiful. We started our evening with lobster and scallops ceviche, followed by a perfectly cooked steak with the most amazing sides. (we recommend the patatas bravas and the mac-n-cheese). Our server, the manager and even the cooks over at the show kitchen were so gracious and with big smiles. Something that we both enjoyed were the desserts. We had 3! (They are kinda big so don't order that many because they are sharable). The winner for me was the Spanish cheesecake and for my husband was the Kardinal Schnitte. The restaurant and everything was a delight, friends of ours that went recently loved it too. They follow all protocols and safety measures, with sanitizers, temperature checks and everyone wears masks. We loved our first experience so much that we have reservations again tonight! Before all indoor dining shuts down again. So excited!!

I had a delicious dinner at CUT but the bad taste of the horrible service lingers for my anniversary dinner. A 20 minute wait to be greeted started things off - no menus, no water, no hello. Table seated after us/right next to us was immediately greeted. I wanted to get up and leave, but sat tight knowing it was a special occasion and didn’t want to upset my husband who made the plans. I was hoping I wouldn’t regret that decision, but the service only got worse and I did regret it. Another 15+ minutes after getting menus and my waiter was FINALLY ready to place my drink order. When I ordered a glass of wine, I had to ask for a water refill - which took another 10 minutes to show up. And the water refills were sloooow to come the rest of the night. Starters were quick to show up - almost an hour after we were seated. The main course? That showed up more than 30 minutes after the starters were cleared. My wine glass was empty that entire time, as nobody checked on us, noticed the empty glass or asked if I wanted more. Everyone around us had their meat cut tableside. Ours was brought cut and plated. “Crab” fried rice had no crab on top or inside. Dessert was only area where waitstaff got things right. Told it was a 20 minute wait for soufflé and it was. Soufflé was also delicious. After requesting the check, husband had to flag down staff to run our credit card because we were in another hold pattern of 10+ minutes. Dessert was finished, no coffee or other drinks. It was clear we were DONE. Everything about our experience was that we were an after thought. Husband made note of our anniversary when making our reservation. Not only was no mention made of the occasion, but folks around us were vocally acknowledged as VIPs by wait staff, noted for an occasion and had wait staff checking on them with much greater frequency, I normally am very vocal but held my tongue that night not only to not spoil it for my husband but also because I was dumbfounded and didn’t know what would escape my mouth if I spoke up. I had high hopes for CUT based on a great review from a foodie friend and my experiences at Spago, but anticipate they won’t make the cut in DC if the service I experienced continues.

WOW! We had such a lovely evening Friday night at Cut. Our dinner adding to our Anniversary celebration. Everything was excellent. The food was delicious; the service was wonderful and the atmosphere was relaxing. Our waitress and the sommelier made the dinner extra special with their attentiveness and professionalism yet casual appraoch to service. Must try the lobster ceviche and the sweet corn tortellini; but save room for a wonderfully prepared steak! We will definitely be back and will be recommending the Rosewood Hotel and Cut to our friends.
