We initially went to the courtyard area for drinks before our lunch was served, and it was really nice. Our lunch total took 4 hours, as we opted for the 30 course meal (which actually turned into 29 courses because they forgot to serve us one course). We only found out one was missing because they gave us a printed out menu with the date, what we drank, and what we ate at the end of our dinner, and we noticed that one of the dishes we definitely didn't have. What they did to make up for it is cut down our bill by 1/26 lol. Frozen passion fruit ladyfinger with rum (I actually don't have a picture of this, and don't even really remember this much)The best that comes out of the land - really cool presentation. The "beet" was actually embedded below these small "rocks", and they would swirl the container, and the beets would slowly surface up. Lychee and roses with gin - pretty presentation. The lychee was good. Don't eat the rose petalsPanchino / filled with beluga caviar - THE BEST THING I'VE EVER EATEN!!!! I will never forget this. I could eat this forever and ever. It's so good. Savory walnut candy with mango, tonka beans, and whisky - this was really flavorful. Presentation was also beautifulSmoked instant apple cider - was good, but not mind blowingIdizabal Mille feuille - also not mind blowingDisfrutar Gilda - this was actually pretty delicious and one of the more filling dishes. It had pieces of fish in this vinegar-y sauce. There was an "olive" in the middle that was like a little ball with olive juice inside. I don't even like olives and I thought it was cool. Gazpacho sandwich with vinegar garnish - kind of a cool concept. I literally felt like I was eating a gazpacho sandwich. Just imagine a small slice of frozen gazpacho in the middle of 2 pieces of breadSuper tender almonds in vinaigrette - the description says it all. They were very good and savory Crispy egg yolk with mushrooms gelatine - this is their signature dish, and it's absolutely beautiful. It also tastes really good!!! Multi spherical tartin of foie gras and corn - was pretty cool and pretty. I'm not a HUGE fan of foie gras though. Ceviche deconstruction - this was the dish we didn't get :( very sadRazor clams with seaweed in salt - one of the top dishes. Was super super good!Our macaroni carbonara - very filling and creamyLiquid salad - literally a green liquid with orange/pink foam. I did like thisTomato polvoron and arbequina oil caviar - this was a little too dry for my taste even though it came with the liquid salad. Sea cucumbers - very good, but not super unique Langoustine - loves how delicate and divine this tasted! Cappuccino - was good but didn't stand out Hare cold juice - I really really didn't care for this at all, but my significant other loved this. I would describe it similar to cold bone broth. Hare and foie gras - this was alright. I'm not a huge fan of foie gras, so that's probably why I wasn't a huge fan. Laksa - mmmmm one of my favorite dishes. It was so flavorful. I just wish there was more of it!Pibil squab - aka pidgeon. This was probably one of the more filling dishes, and was delicious. Also came with baby corn which I love!Pandan - I'm not a huge pandan fan, but I do like it. This dessert was good, but didn't blow me away. Black sesame cornet - absolutely amazing. No other black sesame dessert has been able to beat this one! Love love love it. Cherries - ok so really it's not just cherries that they give you. It looks like a cherry and tastes like a cherry, but when you bite into it, it creates and juicy explosion that is actually very interesting and a cool experience. Tarta al whisky - nothing too special about this. Coffee Swiss roll - was good, nothing special. Cocoa and mint cotton - What. A. Cool. Dessert. This comes out in a stick of cotton, and some of the cotton balls are real, and some of them are cotton candy that tastes like chocolate and mint. Super super cool (no pun intended) and good tasting!
