Three stars with mixed feelings! My first visit to Edge Steakhouse was over the Super Bowl weekend to the historic Westgate Hotel! Westgate was the former Las Vegas Hilton, and the former International, and best known as the home to Elvis while performing in their theater. This is one of the easier Vegas steakhouse's to get to for the locals as it's a block or two off-Strip, plus free parking, and not overly large by Vegas hotel standards today. The steakhouse is beautiful when walking in and passing the lounge/bar area. Seated promptly due to having reservations, the interior seating area was just as nice! The immediate disappointment started as we were seated. We sat for nearly 15 minutes without being recognized by anyone! it became awkward when servers from other tables would pass by and look and notice that menus were closed, laying on the table, and not so much as a glass of water on the table! a major faux pas for a high end steakhouse!! Our server for the evening finally appeared, made a quick 3 second apology, and proceeded to start with the order. No charisma, no small talk to smooth out the immediate rough edges, just straight to the order! The food was on point, and exquisitely great! The charred octopus is a must for the appetizer! This is simply an outstanding dish! I would also recommend the "3 course pre-fixe" add on. For $30 you can add a salad, side, and dessert to any steak on the menu. The Caesar was outstanding, my 10oz Filet cooked to a perfect medium rare, and the creamed spinach was perhaps the best version of that dish I've ever experienced! Finishing off with the fiery crème brûlée brought table side as if it's being "announced" was the icing on the cake! Even after spending a few hundred dollars, and tipping the server appropriately despite his lack of enthusiasm, he was status quo with barely acknowledging us as we finished the evening! At this point I was amused by the lack of a professional "Vegas steakhouse" service in such an iconic hotel. I would be hard pressed to recommend it to anyone knowing the experience they would be hoping for.
