A remarkably different restaurant that could be in New York, London or Copenhagen. Brutal focus on the product and its original taste. Seasonal, regionally sourced. Presented with great enthusiasm, passion and Anglo-American professionalism. A foodie hotspot. Wine accompaniment almost exclusively naturals and orange - open-mindedness necessary for this. Not cheap but an absolutely brilliant experience. While you still can - go and enjoy. Still blown away.

The entrance is perplexing, ringing a bell in a very anonymous door on the street. An equally anonymous corridor leads to a small room/kitchen. Only eight guests, sitting at the counter in front of the kitchen, where many young chefs take turns preparing and presenting the dishes. Many small morsels (more than thirty) which develop various ingredients in different ways (cucumbers, courgettes, prawns, etc.). Extremely careful preparation of each dish. Detailed explanations of all the ingredients, very fresh and of excellent quality, with origin, provenance and characteristics. The brigade moves very well in confined spaces, which requires great organization and coordination. The wine pairing doesn't satisfy me but the alternatives (for a fee) do, as does the initial champagne. Unique experience, very original albeit with exquisite but not memorable dishes. Super service. Very high bill, paid on booking and therefore already forgotten.

Hidden behind a stainless-steel door on an unassuming street in the Wedding neighborhood Ernst sees Vancouver Chef Dylan Watson-Brawn and his team serving micro-seasonal Produce and exquisite Seafood across 35 courses for 8 seats. Utilizing close relationships with his producers and Japanese technique honed at Nihonryori RyuGin, plus time at the likes of noma, the menu changes daily with simplicity and focus but zero pretense. Pointless to describe course-for-course, though Fava Beans, Chawanmushi, Langoustine, Lobster and Colostrum Ice Cream all remain indelible memories, reservations are mandatory via Tock as soon as they become available with a prepaid ticket allowing diners to sit back, relax and rest assured that they are in good hands. Creative yet concise, confident but comfortable, and all of it from a truly hospitable staff that seems genuinely interested in providing each guest with a personalized experience making use of the best Ingredients available.

This was an exquisite meal, one of those meals worth travelling for. The space is lovely, and the team of chefs have a very well-rehearsed choreography so you never see them bumping into each other or reaching over each other, despite the many course, sometimes with several prep elements. That is key- I have eaten in restaurants with open kitchens before where there is less harmony, which directly impacts the dining experience. The meal itself was one of the most thoughtful progressions I have ever had. When I ate there in early December 2021, the main themes were a) citrus (and what an incredible variety of citrus fruits were featured!) and b) the spirit of the ocean (manifested in different ways including through dashis, oysters, and razor clams). The chef wove the meal around these themes with such elegance and consistency, and elements of constant surprise. The texture of each dish was perfection, this chef understands texture intimately and how to use it to enhance a dish. This chef has mastered the art of editing down, something I really appreciated. Every element in every bite was there for a reason, and overall the meal ate like a perfect and harmonious symphony where not a single note was out of place. My only quibble was that the chef uses very little salt, which in most dishes was fine, but there were just one or two bite where a few salt crystals would have elevated the dish even more. The wine was excellent, as was my friendโs juice pairing. This is a meal that will stay with me for a long time, and I am very excited to go back again soon.

To call this place a restaurant doesnt feel quite right. Its an experience...and what a wonderful experience it was. My wife and I visited ERNST in June 2019 and we were treated to a wonderful, insightful and ultimately extremely enjoyable experience. Admittedly it is a very pricey experience and having paid in advance for the meal and wine pareing we were slightly taken aback by the price of the digestiv that followed our evening and which did leave a very slight bitter aftertaste. But apart from that, it was a fascinating thoroughly enjoyable evening.

From the time you arrive and ring the bell at Ernst, you are welcomed by the entire staff. This friendly and personal attention continues throughout the entire 3 hours plus experience, with its 30 to 40 small courses and drink pairings. The restaurant seats 12 in a L-shape around the food preparation area, so you can watch everything involved as the staff of 7 prepares around 400 dishes and 75 libations. This is a performance that almost seems choreographed in its smoothness and intricacy. Every course is a surprise for the senses, and the drink pairings seemed truly inspired. Our party of 4 did not know what to expect, but we all came away happy.
