Little dissapointing
waited around 5 years to check this place out, I guess it was one of those bad days, stood in line for 4 1/2 hours only to get mediocre brisket, I mean it was so dissapointing, the brisket was dry, had no flavor, they even cut it in thin strips not like the thick pieces you always see on TV I guess so it wouldnt be so tough. I usually give restaurants a second chance because none can be excellent all the time, but to wait hours in line and not including the 4 hour drive to and from my house, I dont think I will do this again.

You will not find better bbq anywhere. The brisket was moist, smoky and otherworldly. The pork ribs were also tremendous. Yes, it will be a long wait but so worth it. Get there at 9 am or earlier to ensure you get brisket and ribs. Franklin has chairs to loan you under the stairs and has friendly staff who will let you know if you honestly have a chance to get the meats you want ( they run out everyday) so sit back, read a book, drink a beer or 2 and await greatness

The first time I heard about Franklin was in the movie The Chef. Ever since we’ve been looking forward to visiting it and it was an AMAZING experience. We were lucky to get in there just after a two hour line!!! And believe me, IT’S TOTALKY WORTH IT!!!! Food is incredible. We tried the pulled pork (OMG), ribs and brisket. Everything was great. The staff is so friendly. No doubt an experience I will repeat when in Austin.
Be the first to ReplyAmazing in every way!
Franklins was mouth dropping delish! The atmosphere, friendly staff, and the BRISKET……oh my! Get there early, line starts hours before opening. They offer chairs. The line antics is half the experience! Brisket drippy, juicy, flavors “oh my”……no knife needed. Pecan pie also very tasty. Add it to your must visit in Austin.

Holiday weekend + cheap fares = Q in ATX, and Q in ATX means Franklin. We were here in summer 2019, and the line was LONG. 7:30 AM arrival then put us about 70th in line (they open at 11). Today is COLD, it was about 35 degrees at 7:15, we got there at 7:30 and were second in line behind one fellow warrior who arrived at 5:50! They have chairs you can use, so we all lined up. 10 folks or so by 8AM. 30 by 9, when they came out and invited folks in to buy merch, drinks, and use the bathroom. Sun was out by now but it was still chilly. Aaron Franklin opened the doors right at 11AM and greeted everyone. Folks in front of us were buying like eight pounds of meat. We were a bit more cautious and got 1/2 pound of brisket, 2 pork ribs, and 1.5 lbs of turkey and we couldn’t have been happier. Meat cutter was very friendly and gave good advice, and tossed a couple burnt ends into our order when I asked about them. Side gang and cashier also are totally welcoming and your business definitely feels appreciated here. We got a couple containers for half the brisket and most of the turkey and will happily take it home and enjoy over the next many days/weeks,
Be the first to ReplyBest BBQ we have had
We were told it was the best BBQ and to go early. The line was long, out the door and down the ramp. The line moved fast and several people were ordering to-go. They have great communication with a gal that keeps you informed while waiting of how to order, what to expect and if they are running low on any meat. It looks like it is in a house and in a neighborhood. You seat yourself after ordering at wood tables and have basic paper plates but it is fabulous. Their sauces are amazing and all of the food was worth the wait. We shared a combo meal with another couple and had left overs. It is a bit pricey but meat is expensive and their smoking was perfect. My husband loved the Espresso BBQ sauce and wished we would have had a checked bag to bring it home in. Franklin's is a definite do-over.

Not sure if this place is famous for its food or the 1 1/2 hour + wait in-line. Luckily, the weather was nice, so we didn't mind the long, long, long wait in-line outside. Arrived around 11:00, and by the time we ordered our food it was almost 1. The brisket was the best ever: melted in the mouth. Unfortunately, the potato salad was too salty. The staff were cheerful and very accommodating.

I drove to Franklin’s Barbecue for lunch after my e-bike tour. There was a long line up, the total time from start of line to eating was 2 hours; 90 minutes to the front door and 30 more minutes once inside. I ordered the half pound of brisket, quarter pound of ribs (1 rib), couple slices of turkey and a jalapeno cheddar sausage. The brisket was fantastic, the best I have ever had! The jalapeno cheddar sausage was really good, but greasy, and the turkey was surprisingly really good. The pork rib was at best average; disappointing based on the hype, and the potato salad was average, I’ve had better, leave it at that. The price was reasonable based on other BBQ places that I dine at. I will give you foodies and tourists the best tip possible, even though I had a fantastic BBQ experience at Franklin’s Barbecue, I would not wait in another line for hours for BBQ again. The next day I drove to the town of Lockhart and had fantastic BBQ at two different places where the total time of traveling and eating equated to less than my wait time at Franklin’s Barbecue, and it was cheaper! Started a 4 day BBQ Road Trip in Texas. Franklin was worth the 4 hour wait in line. The meat was absolutely delicious. He knows BBQ!
Be the first to ReplyDo not give up.
We arrived in Austin on 11/2 and wanted to see if there was a chance to get into Franklins. We arrived at 2:15pm and unfortunately missed out by 10 people to get lunch. On 11/3, I arrived at 8:40am and was about 110th in line. We got inside and got a table at 12:45 pm. We got brisket, beef ribs, turkey and sausage. The food was sweating and flavorful. I would wait 2x that to have it again.
Be the first to ReplyMust do.
We arrived at 8am on a Thursday morning and we’re 9th and 10th in line. We were served at 11.15am. Sure, the wait it long, but we made friends and chatted with the group around us. Once you have your spot you can always leave and walk around the building or up the road to the cafe. The wait is absolutely worth it. The brisket is unreal. Ribs are amazing. Sides 10/10. It’s unlikely you’ll experience barbecue like this again. Franklin delivers it so consistently. Must do while in Austin.

In our travels, my wife and I have visited barbecue restaurants in Memphis, Kansas City, Chicago, St. Louis and Charleston. And now Austin. Our experience at Franklin Barbecue was unlike any other with a long line that formed well before the lunch hour for brisket, pulled pork and other smoked meats. Located at 900 East 11th Street, in the Central East Austin neighborhood, Franklin Barbecue open from 11 to 3 Tuesday through Sunday. It is the brainchild of Aaron Franklin, who has earned a reputation as the country's most celebrated pitmaster. Franklin is a James Beard Award recipient for Best Chef and is author of a New York Times best-selling book detailing the wonders of Franklin Barbecue. He was inducted into the American Royal Barbecue Hall of Fame in 2020. Customers line up to purchase brisket, ribs, pulled pork, smoked turkey, sausage and jalapeno cheddar sausage by the pound. We heeded warnings to arrive early to avoid the crowd and managed to join another couple for a delightful and delicious lunch of brisket sandwich, pulled pork sandwich, coleslaw, potato salad, pecan pie, bourbon banana pie and St. Arnold root beer. Franklin Barbecue is all that it is cracked up to be. The lines of hungry and adoring customers attest to that.
Be the first to ReplyWorth The Wait
We came down from North TX to hit some of the famous BBQ places and this one was top of the list. Was a bit concerned about a Friday but that is just how our schedule worked. Staying outside of Blanco so left at 7am to hour drive in - due to traffic arrived about 8:15am. When arrived we were 21st in line. They had lots of bag chairs you can borrow, At 9:30am they opened up the building to buy souvenirs and use restrooms. If towards the front of the line you are undercover otherwise on sidewalk area. Very small parking at the location but a large lot East and some additional park further down. They will come and ask you what your meat order is and unable to change when you get up to receive food. They do this to know how many people they can serve what. So do your research first and be ready. Sides are simple but hearty. They give you butcher paper to wrap up any leftovers but I recommend bringing to go containers to better store. The meats are on the wetter side so the paper does not keep it from leaking. Now to the food - it was very good. So many ways to cook BBQ and each person has their favorite ways. The house sausage, brisket ribs and turkey. Nothing disappointed. Note you can't save tables once open they want you to have food in hand before you sit down as it make take a while to go thru the line and allows others to sit and eat.
Be the first to ReplyFinally trying the world famous Franklin's brisket
I spent a weekend in Austin and I tried several barbecue places. The food here at Franklin's is good, but I don't think it's as good as all the hype that it gets. There are so many other great barbecue places where you can get barbecue that's just as good for only a 15 or 20 minute wait. Like Micklethwait or Terry Blacks. Plus for me, beef ribs are my favorite. And Terry Black's have beef ribs everyday and Franklin's only has them on Saturdays.

So worth the wait. Tastiest, juiciest, most flavorful meat on the planet! Love the atmosphere and the proprietors and staff.
Be the first to ReplyOverhyped
Not sure why this place is so highly review and recommended. I know Texas bbq is all about the salt/pepper rub and the bark which all the meats had. But the flavor to me was just a bit boring. All the meat options were moist but nothing blew my mind. Ribs were particularly good but 30 bucks for 4 is steep. All the other portions I would say were well worth the price. I did not care for any of the sauces and the potato salad was super mustardy. I love mustard potato salad but it’s more about the ratio of mustard and a little mayo. Banana tart was interesting. Crumbly graham cracker crust, slice bananas and custard. But once again I found it lacking a flavor punch. Perhaps I was just overhyped but to me it was just an average meal that I would never wait in line for.
Be the first to ReplyThe best Sunday lunch!
In Austin for a few days and glad I popped in for the most amazing BBQ. What a Sunday lunch! Amazing. Highly recommend and only a 10 minute walk from the state capital building.
Be the first to ReplyFantastic food, worth the wait?
Wow! The BBQ is amazing. Perhaps best we’ve ever had. Tried brisket, pork ribs and turkey. Really liked the Texas BBQ sauce. Coleslaw was so-so. Staff was friendly. Downside- got there at 11:30 and waited in line 2 hours before we got our food. A lady pulled up and said she had a preorder and was directed around back. I’d definitely see about preorders before I went back.

I've heard about Franklin's for years. As a novice BBQ aficionado, I've watched his Youtube videos and even took his Masterclass to improve my skill. But nothing compared to the experience at the restaurant. We had visited 3 other BBQ places around Austin and saved Franklin's for last. Waited in line for a couple of hours. Tried the brisket, turkey, sausages, ribs, cole slaw and potato salad. I knew it would be good, but it was much better than my expectations. The brisket texture and flavor were amazing. The cheddar jalapeno sausage was unbelievably good. Those 2 meats stole the show, but the ribs, turkey and sides were excellent as well. The staff seem to genuinely enjoy their job and share in the enthusiasm of their customers. Would return and stand in line again in a heartbeat. Best BBQ ever!
Be the first to ReplyWorth the wait for Best Brisket in town
Having tried multiple barbecue places in Austin, Driftwood and San Antonio Texas I’d have to give Franklin’s Barbecue the crown for best brisket. It’s certainly the best I’ve ever had. I also had a jalapeño sausage and ribs but they were just average. If I had a choose again, the desserts are a definite pass. And while Franklins gets top billing for its brisket, Austin’s LeRoy & Lewis is a far better choice for everything else (bacon ribs yummy, sides were fantastic and the desserts superior).

After years of wanting to go to Franklin's Barbecue finally made it. I must say it was worth the wait. The brisket was to die for, the jalapeño cheddar sausage and smoked turkey were a great surprise. If you want some authentic Texas brisket Franklin's is a must.
Be the first to ReplyThe hype is real, this is the World's BEST Brisket and Pork Ribs...WOW!!!!!
Wow...WoW...WOW!! Best brisket, pork ribs, and pulled pork I have ever eaten! When there is this much hype and expectation going into any eating experience it's usually hard to measure up. But not only did Franklin's measure up, they exceeded everyone in our group of fours expectation of what amazing barbecue is. I am now ruined and will be chasing amazing barbecue until someday I am able to return here to Franklin Barbecue.

Love their meat especially their brisket, melt in mouth. So so good. They sell chilled and packed brisket - great for bring back home from your traveling
Be the first to ReplyAHHHHHH-MAZINGLY worth the wait!
Wait for it....just wait for it! I got in line about 0930, met some wonderful fellas from west Texas who thought it would be "all hype" and were pleasantly surprised. The brisket was buttery smooth, the ribs were nicely flavored and the jalapeno cheddar sausage was so good. Even the little pies were great! The hard core BBQ dudes I met admitted it was the "Best they'd ever had".
Be the first to ReplyExtremely disappointing
Disappointing to say the least, arrived on Tuesday, July 5th @ 10:30am. Waited outside in line until 12:15pm in order to just get inside the restaurant- which meant standing in line for an additional 30mins until we got our food @ 12:45pm. It might have been acceptable IF we had liked the BBQ. I’m sure this review is of a different opinion than most- but the brisket, ribs, and sausage were extremely greasy. The best things we ate: potato salad, pecan pie, and banana bourbon pie. The staff were super friendly and tried hard to serve us, but unfortunately the BBQ was waaay too greasy for us- won’t be back…
