Walked over after visiting the state capitol and the line didn't look horrible (not quite to the parking lot in the back) but it was still around a 2 hour wait. A lady came out trying to estimate what people were going to order to estimate when the meat would run out. We ordered way too much food for 2: 1# brisket - very tender. Not too salty. Highly recommend this!! 1# pulled pork - just ok. Nothing to write home about 1 pint potato salad - it was a bit vinegary for me 1 pint Cole slaw - this was light and refreshing. Needed some veggies for all that meat! This was MORE than enough food for the two of us. Probably should've ordered 1/2# of each meat instead and a single serving of the sides. After we ordered our food, they ran out of brisket a couple orders later. Sooo glad we got to try this place. I don't know that I would wait in line again.

We came to Austin for the food and had to try Franklin's! The location was really cute, clean, and trendy and the service was good. We did order ahead to avoid the lines and got a pound each of sausage, turkey, brisket, pulled pork, and beef pieces plus every side. The turkey was my favorite and probably the best smoked turkey I've ever had. The brisket (a bit on the salty side but very tender) and sausage were also very good, and I liked the beef tips too, though had a little too much sauce for me. The pulled pork didn't have much flavor without the bbq sauce. I liked the original bbq sauce the best. None of the sauces were very thick which was a little different for me but not bad. Others in my party also liked the special sauce which was made with coffee I believe. The sides were okay. The coleslaw was understated but nice and fresh, the beans were a little on the spicy side, the potato salad was very strong on the mustard, and the bread was basic white sandwich bread. The take away server was friendly and gave us a root beer and some sample brisket while we were waiting about 20 minutes, but we still received our food during the last ten minutes of our time window and had arrived a little early by choice. Overall a good experience and I'm glad we tried it!

My friend and I visited Franklin Barbecue and waited nearly three hours in line for our food. Was it worth the wait? Absolutely. This place has easily the BBQ I've ever had (though I haven't had much). The brisket was tender, flavorful, not too fatty, and a must-get if you're here. The ribs were also well done and the sides complemented the meat very well. I don't remember the name of the woman that took our order, but she was lively, friendly, and a pleasure to talk to! She took our order with such efficiency and friendliness, and she made sure everyone in line knew the availability of certain menu items as the day went on. If you like BBQ, definitely visit Franklin!

This time we brought empty suitcases and placed pickup orders 6 weeks in advance. Worked better than perfect. We had some changes to our travel schedule and Franklin accommodated us and let us pick up early. They respond promptly to emails and worked with us to get our Franklin to bring back to California (we had a refrigerator in our hotel). And...when we got that BBQ back to Cali, we had a par-tay and shared that Franklin with many friends and family. That is some great BBQ, especially the brisket.

Did we endure nearly two hours of waiting to receive our order? Without a doubt. Was it worth every minute? Undoubtedly. Despite the underwhelming variety of sides--limited to slaw, potato, and beans--the real star of the show here is unquestionably the meat. Each succulent bite was a testament to the craftmanship and dedication of the pitmasters. It was an absolute delight to savor such juicy, flavorful meat, making our visit to Austin truly memorable.

Yes I waited about 3 hours but it's interesting how a community builds while you're in line for a common purpose. I met people from 4 different states along with us Texans. Staff was great keeping the crowd updated and the servers went out of their way to be helpful. Food? Cmon man! Aaron Franklin is King of TX barbecue. Brisket and ribs are about as perfect as you can get. Jalapeño sausage- very good! Sides are simple; that's how they roll. Go experience it when you can invest the time and get there early.

I waited in line for 2 hours. I'm now a believer. Amazing BBQ. Being a New Yorker, I do think they could be more efficient, but when you make BBQ THIS GOOD, you can do what you please. EVERYTHING was AMAZING. I even had the ribs, and I'm not a ribs fan...I am a Franklin rib fan. I'd get a whole rack next time I go. Delicious.

5 hours in line on a recent Sunday morning. Questioning our decision as we waited. Once we tasted the brisket... wow! Well worth the wait! Would definitely do it all over again. The staff was super friendly and made the waiting process bearable.

Best I've ever had! The ONLY downside, we did have to wait 2.5 hours in a line to try this amazing ness. They did provide camp chairs to sit in so that was nice. Bring cards or something to do with your group while you wait. We arrived half hour before they opened and still waited that long. You'll wait, but it is worth it.

After 10 years, I finally found the opportunity to return to Franklin BBQ in Austin. Was it really as good as I remembered? Was it really worth the wait? WTH am I doing waking up at 6:30 AM to get in line by 7? Read on to find out.My Overall Rating - 5 Stars (Atmosphere, Service, Food, Return)Atmosphere - Making a trek to Franklin isn't about enjoying the atmosphere of a cool, hipster dive with intoxicating smoke meat smells throughout (which it is). No! It's about standing in line with strangers who had the same idea as you and waiting in line. Bring a folding chair so you can sit and wait. Just know there are two waits: The wait for Franklin BBQ to open, and the wait in line to order. On a Friday (end of Spring Break and SXSW) I was the second in line at 7 AM. It was cold and rainy, and that may have kept people away. But once you're in, you get to continue to wait to place your order. The entire experience is cool. 1 Star.Service - The staff is awesome. They'll help you find a seat after you order and pay. And ordering is the best part. The expert carver will take your order and carefully slice brisket, ribs, or any other smoked meats to your liking. You may get impatient as they slice the meat for the group in front of you, but you'll quickly forget once it's your turn. 1 Star. Food - Franklin BBQs brisket is world renowned, so today I want to spotlight the pork rib. I ordered a full rack and was rewarded with possibly the best rib I've ever had. The perfectly smoked rib was tender, fell off the bone, and had two parts: The meaty end with a little cartilage, which I devoured like a neanderthal. Then the rib bone meat, which was perfectly seasoned and literally fell to the table because of it's tenderness. On this visit, the pork rib reigned supreme. I'm not a big sauce guy, but Franklin BBQ has a regular and spicy sauce. Both are very sweet, but neither are needed. 2 Stars. Will I Return? - Yes. It took me ten years to make my return, but I promise I won't go as long. It was better than I remembered it. Anyone who likes to experience amazing BBQ and doesn't mind a long wait should line up now. 1 Star.

.. as far as texture on the brisket, I don't think it could possibly any better. It was a treat to try just salt and pepper bbq. The turkey was alright but I wouldn't order again. The pork ribs were moist and packed with flavor. Sides were all good and service was beyond impeccable. They have a lot of chairs they have sitting outside for anyone to use.

Had to go back to to give Franklin's another shot fresh from the store. We waited about 3 hours total from the time we got to the restaurant to our table (which is pretty standard for Franklin). For a party of 5 we ordered 2lb pork ribs, 2.5lbs brisket, 1lb sausage and .5lb turkey, quart of coleslaw, pint of bean and pint of potato salad and it was more than enough! Plenty of leftovers which is always welcomed. Again the rib really shined, it was everyone's favorite by far and the perfect amount of spice/fat and fell right off the bone. The brisket is really great but I don't know if it is truly the best in Austin. The spicy sausage had the perfect snap to it and was absolutely delicious. All sauces were great and really made the meal. Only down side is the sides. A BBQ place without mac n cheese is a crime in my book. Between that and the long wait that you can avoid at other places I gave it 4/5 but realistically a 4.5/5, you won't regret the wait it is truly delicious.

Simply the best BBQ I have ever had in my life! If you are visiting Austin then this is a must! I have tried many of the other bbq places here in Austin but none can compare to the brisket at Franklin bbq. You will have to wait in line for this amazing bbq but that's part of the experience and I promise you it is well worth the wait!

It breaks my NC heart to say this but Franklins, hands down, makes the best pulled pork I have ever tasted. I love you TX but so many places here butcher pulled pork but dang, Franklins beats out a lot of the places I had on the NC BBQ trail; so moist, so smoky and flavorful! I didn't even miss the vinegary sauce.Now, yes, Franklins makes a mean moist brisket and ribs and his bbq rub is a bold and peppery road to flavor town, BUT I can't say it is worth waiting hours in line for. Yes. I said what I said. When Franklins first broke on the bbq scene, I can see why people would camp out for this place but thanks to Franklins, so many other places have upped their bbq game that there are a lot of eateries (especially ones that have opened in the past 5 years) where you can get brisket just as good without waking up at the crack of dawn. Also, Franklins lets you pre-order online. That's the way to go, especially if you have a large group. Thanks Franklins for raising the bar!

Incredible! We wait almost an hour and a half but it was really worth it. They are famous for the brisket and it is DELICIOUS but the ribs were something from another planet, absolutely AMAZING! We try all the meats and all were great. Best bbq in town! The people is very friendly, when you arrive you can ask what they have left and they will let you know if you would be able to get what you want. I recommend going around midday.

This is not somewhere you can go for dinner, because everything will be sold out by then. We got up early and stood in line at 10/11am to get some amazing barbecue, as we are waiting the employees shout out that certain meats are sold out which just adds to the adrenaline rush and absolute mouth watering. The brisket was my favorite of the meats, and I would highly recommend coming here if you like the barbecue meat. The sides are good, but I am not totally obsessed with them, I always say that they focus on the main course, and the sides just act as palette cleansers for the next bite of brisket that absolutely melts in your mouth. The seasoning is so incredible, and everything about it is so yum. I am not usually one for red meat, but I can make exceptions!! There isn't a whole lot of seating, and it will definitely be packed, you will be waiting in line, but if there is a line that long, there is a reason people still join it. Franklin's is worth it every time!!

Franklin Barbecue was on a lot of "must try on your visit to Austin" blogs while planning where to go. So naturally, I was inclined.What these blogs failed to mention is how long the wait would be! I got there at opening and still waited 2 hours in line. One of the people working there informed us that we would likely only be served the brisket and the links based on our position in line and they were correct.It does get very packed so I had to camp out spots and wait for people to finish eating to find a seat. When we did sit down to eat, the food was to die for! The brisket was so tender it felt like it melted on my tongue. If I had one complaint, it would be that the brisket was a little salty. Overall, I'd you haven't been then you definitely need to check out this Austin BBQ staple at least once!

I have to say one thing, however: to really enjoy this BBQ, it must be eaten fresh and hot since a lot of the tenderness and flavor is reliant on the fat being rendered and melted. If you take it to go and let it sit for too long, the fat re-solidifies, and the tenderness and flavor are lost. You must reheat the proteins if you choose to let them sit for 45 minutes or an hour. Brisket: Seasoned perfectly - enough salt on the exterior to balance out with a bite in their interior. The heavy amount of fat is needed for the tenderness and the delicious natural flavors of the meat to come out. Sausage: You notice how juicy this sausage is when you first bite into it. The amount of fat in this sausage is great and the seasoning meshes well with Central Texan BBQRibs: Honestly, people come here for brisket but the ribs impressed me more. That's not to say it's better than the brisket - I was just expecting that you can only do so much to make a rib taste good and Franklin's exceeded that expectation. It's juicy, extremely tender, porky, seasoned with the right amount of black pepper and salt. Sides are great too - sauces are not overpowering, coleslaw and potato salads have a hefty amount of acid to cut through the fatty meat.

After reading about the lines and best time to go- we got there are around 1:35 (line wasnt horrible ended near the first picnic bench) after the lunch rush- but before it's "too late" which is a very fine line- it took us about an hour- hour and half. They had to let some people go when they knew they wouldn't have enough food left, but we made the cut. They ran out of some sausage and ribs but we knew coming late that might happen. Brisket is to DIE for! So good. Worth the wait and will be back again when we head back to Austin.

. this place has a book out and is heralded as the best BBQ place in TX .. maybe even the world. I can't say I've waited in line for 4-5 hrs in the morning for this but I did get takeout, which is a much more viable option (but they upped the minimum order threshold to ~5 lbs ~$150+ last I checked).I do remember opening the tray of pork ribs and getting a waft of the smokey, juicy aromatics. You can tell they put a lot of detail into prepping as you can taste some of the hickory-ness in the meat. Everything was cooked perfectly and had a gorgeous bark on it. This place makes great for special occasions for out-of-towners and big gatherings. Also check out their book which tells a lovely origin story of BBQ'ing out of a backyard.

I need to say nothing more then 5 hour wait was 100% worth it. Best smoked meat I have ever had. Brisket melts in your mouth and hands down the best Turkey!
