Like the road in front of them
I love farms. They give you the impression life is simple and fair. Nature gives, mankind consumes. Farmers used to be abundant, exchanging produce and making villages rich. We decided to construct busy roads, fill them with moving metal, producing a repetitive humming sound, as if our cows were not rhythmic enough. So than decided we needed beans from Kenya, beef from Argentina and why not vanilla from Magascar. And suddenly farms became relics of the past, refurbished to art deco rich men houses, B&B's for the nostalgic and an occasional shooting range for dubious friends. Hors Champs holds a vision, a strong one, to be a farm and gather other farms to offer sustainable food at Michelin star level. Evidence the green Michelin star symbolic award. What follows is perhaps sad. Vision needs strategy. Strategy needs execution. Execution fails, vision falls to pieces. No doubt we had goat cheese from the neighbor, zucchini from the garden and herbs from between the cobblestones in the courtyard but at the same time you want this vision and passion to be shared, expressed, sold by the staff. And unfortunately, that's where the road needs better pavement, like to busy road in front of the farm. Ensure you have a strong and confident maรฎtre in your room,with an ironed shirt and trousers (!), immaculate white sneakers (not grey), passionate about the farm, directing the team and you will see that even the most basic preparations (zucchini in salt crust is not adding value, peas not cooked just need a few of them, strawberries come from the farm as long as the season lasts - apparently the season was already a week closed), will still be appreciated. And yes, it might not have been his day, but chef, please, you were there, we were there, like 25 other guests, just come and say hello, does not cost you pennies but makes you dollars in the long run. PS and to show you I am not always negative, stay overnight, the breakfast is to die for, we really enjoyed that !

While visiting friends in Brussels they invited us to this restaurant about an hour drive into the countryside. We arrived at a very rustic looking farm area and decided to eat outdoors. What came out of the kitchen was wonderful! We had the three course menu and enjoyed everything. The presentation, flavors and focus on local sourced produce was memorable! We let the server select two wines-enjoyed both. Service was attentive and well paced. The inside restaurant is beautiful with an open kitchen.
