Quite simply, this has to be one of the top two meal experiences in my life! The restaurant was attentive from the moment they accepted my reservation. I received an email asking for confirmation 24 hours in advance and to provide a phone number. They also asked if we had any allergies or food restrictions. Upon asking, I was told the dress code is business casual. We were about 20 minutes early for our reservation and did not realize we were supposed to ring the doorbell to gain entry. A staff member had come out to take a phone call, and left the door partly open. Oops, our mistake!We were led into the art room, which had only paintings on the wall. The service was attentive but not intrusive throughout the evening. We only had to say once that we did not drink alcohol and it wasn't an issue. If he was disappointed, like about every other place we've eaten in Rome has been, our waiter did not show it. We never had to fill our water glass with the sparkling water we drank all night.We started with a "painting" of crispy flat bread since we were in the art room, complete with paint brushes and wonderful flavors in orange (tomato), green (spirolina), and brown (olives). It was fun AND delicious. The fresh bread that came with the meal was wonderful too.The evening played out like a symphony. The waiter's recommendations on the menu were spot on, and he delighted in the various choices we made. Each course was presented in a precise manner with full explanation of all the ingredients. There were even palate cleansers and an amuse bouche which looked like a macaroon but wasn't, and it was filled with foie gras and pistachios. All delicious. There was even a point where we had fake caviar make out of chia seeds! Clever and yummy! Throughout the meal, the chef kept surprising us with flavor combinations that I would never have thought would go together but did. Our appetizer course was Eel and Pan fried octopus. The octopus was paired with a faux mayonnaise, green beans and green apple. Faux because no eggs were used; mustard was the base with raspberry! Simply divine! The eel was also delicious... better than I thought eel could ever taste.Pasta course came with house made spaghetti with tiger shrimp, shallot and zucchini flower. The pasta was green (spirulina) and orange (turmeric!). I personally ordered the "Ajo e ojo" which was spaghetti with prawns, lemon, aged Parmesan and fresh mint. SO GOOD!!!Main course was Grey Rabbit and Pigeon. The pigeon reminded me of duck and tasted similar. The various preparations of parts of the pigeon were clever and tasty. This dish also contained the one thing I didn't care for: pigeon liver pate inside a cherry. Beautiful presentation but the cherry taste was lost but the overwhelming and somewhat gamey taste of the pigeon liver pate. The rest of the dish was quite good, and I loved the cherry sauce so much I could have licked the pan it was served in had no one been watching. The rabbit was quite good, and the black truffle shavings were a perfect touch.For dessert, we shared a strawberry sorbet with meringue, freeze dried strawberries and mint. It was a perfect end to a perfect meal, along with the coffee. We even got to greet the sous chef!No detail was unattended in this meal. The service was impeccable without being stiff and too formal. It was worth every penny we spent. Everyone should treat themselves to a Michelin Star restaurant experience at least once, and if you do, Il Convivo Troiani is the place you should do it when in Rome.
