I have had many, many dinners in Tokyo. Kagura offers by far the best Japanese cuisine I have experienced in over four decades. The restaurant seats just 14 guests. The ambience and decoration are those of a traditional, well-to-do, old Japanese farm house. Warm and welcoming, with beautiful wood, including walls and the eating counter, a few masterly selected aesthetic accents (a wall hanging, discreetly illuminated in a small cove, a cast iron antique water kettle hung from the ceiling over the ashes of a charcoal hearth in the floor, a small altar devoted to shinto deities). Dinner was a total immersion into the world of the most sophisticated Japanese flavors. It started with a delicate fig dish, enhanced by a mild creamy dressing, then steamed baby vegetables (served cold with a flavorful gelatin-based dressing), a poached summer fish with young wasabi, umeboshi dressing, and fresh (not dried) nori (a rarity, even in Japan), followed by a vegetable broth of phenomenal complexity with a dumpling of lotus root (this dish was my personal favorite), then tofu skins over a small portion of cold ramen, a serving of tender duck breasts with myoga and blue berries, a small river fish fried, enjoyable head to tail and accompanied by a light green sauce, and finally white rice cooked and mixed with sweet corn and accompanied by pickles and a strong miso soup. For dessert, a rare, fresh and sweet umeboshi over ice and a lightly flavored jello. All dishes served on the most exquisite Japanese pottery, quite obviously selected by an expert. Great choices of sake. A lovely, mild version of hojicha from Kanazawa. All ingredients are very carefully chosen and sourced, preparations done with incredible expertise, knowledge and skill in superb taste, achieving a unique harmony and integration of all components. Great service and perfect pacing. Dinner was an impressive example of Japanese artisan philosophy, with the chef hiding enormous skill and accomplishment in the appearance of classical simplicity.
