La Vara's menu that simply lists out the ingredients in its dish understates how delicious and creative their preparations are. I'm surprised the restaurant isn't more popular, and I'm slightly hesitant to write a review if not for my desire to reminisce all over again how good the food was.The dishes are in small plate format, so come with a friend or two to experience as much as possible. I had five different items and you couldn't go wrong with any of those.- pulpa de roca, Octopus: the octopus is sliced to translucency, dressed in an unctuous and fruity olive oil with a squeeze of citrus. This was probably my least favorite dish, but only because it was cold and the following dishes were warm and so much more delightful. No hate on the octopus though!- squid ribbons: now this one was incredible. Thinly sliced ribbons that have a slippery chewy noodle texture, but bathed in a creamy and savory pil pil sauce. The laborious knife work only meant extra surface area for the sauce.- iberico and artichoke: the iberico sausage is sliced thinly, all the better to show off it's depth of flavors without and overly chewy texture. But it came with deep fried artichokes and a delicious sauce that was really hard to stop eating. - swordfish eggplant: this is a warm spread that again has the wonderful slightly sweet char of eggplant accompanied by salty swordfish.- rossejat: the name is unfamiliar but it's a seafood paella. I thought it would be too heavy, but the noodles are thin and the dish is generous with its crab shrimp and mussels. I loved the crispy noodles on the cast iron dish!The small plates here are thoughtfully composed with multiple complex components.
