We had dinner at Le Pavillon on Saturday night. It was a spectacular experience. The restaurant is located adjacent to Grand Central Station on Vanderbilt Square, which is a plaza with a large new high rise building. Find the square and you have found the restaurant. It has an entrance off the Square, with a private elevator taking you up a floor. The restaurant is breathtaking. There is a bar at each end. Restaurant seating is in the middle. There is a pathway between the two bar areas along one side of the dining area. The pathway is lined with full sized olive trees imported from Europe. It is great. There is abundant staff. We were seated at the entrance desk. We were visited by the sommelier and served by the wine steward. There were managers visiting the table and waitstaff delivering the food. The staff delivered and the manager explained each dish in detail. When you visit Le Pavillon you either go the three course price fixed dinner route ($135) or the six course tasting menu route. I chose the six course menu priced at $205 and my wife chose the vegetable based six course menu at $155. As you read this, you might be saying “This sounds expensive.” I asked if they do wine pairings for the tasting menu. They do. That would add about $125/head. I am a wine fan, so I studied the large wine list. I am convinced big lists have hidden gems ready to be discovered by true wine fans. I did find a French white priced at $60. We ordered it. The sommelier came by and let me know a couple of features about the wine that might not make it our first choice. He suggested one priced at $75 in it’s place. Considering the vast majority of the wines have three numbers to the left of the decimal point, this was a great “value driven” selection. It was a White Burgundy from the Macon region, a Vire-Clesse. It was an excellent choice. As an FYI, the wine steward carefully poured the bottle over s 2+ hour period, so i5 lasted through the meal. She was very good at her job. The six course menus started with a trio of Amuse Bouchée. The meal ran 2+ hours, which means we were not rushed, nor did we feel there was down t8me between courses. Although I could go through each course in detail, that would take forever to read. The tasting menus are on the restaurant’s website. Each course is explained in detail. There were standouts. The Arctic char was brought to the table on a rolling cart topped with a rectangular block of pink Himalayan sea salt, looking like a pink carving board. The fish was then topped with six grams of Kaluga caviar, which is a variety the Chinese are producing from a deep lake near the China/Russia border. It was spectacular. You might be saying “How exciting could a vegetable based tasting menu be? The standout was an egg and corn based dish with an abundant amount of black truffles shaved over the top. There were lots of truffle slices! My wife tore off small pieces of bread, put a truffle slice on top and shared them with me. What about bread? A basket was served with three types. My favorite was the triangular olive rolls. The butter came from Normandy. As you can tell, we had a great experience. There is more to tell, because there is incredible attention to detail here. I was noticing my wife’s jewelry sparkled. There are tiny pin spotlights in the ceiling making this happen. Doesn’t everyone want their jewelry to sparkle? This was a spectacular experience. Bear in mind, it is costly. Obviously you need reservations. They open the reservation book on a rolling 30 day basis. I called at 9:00 AM on June 15th to get a 7:30 PM reservation on July 15th. It was great!
