The place is very beautiful, even if the room where we dined has predominantly gray colors, and being a place by the sea, it may not please you if you prefer lighter shades and brighter colors. The appetizer, the chef's signature mozzarella millefeuille, was really good but the accompanying broccoli sauce would perhaps be better replaced with a basil sauce, but that's a matter of personal taste. Nothing to say about the fake spaghetti made from calamari, really good. On the seafood Genoese the pasta was a little behind cooked while the red snapper tartare was not very evident on the plate, overshadowed by the onion sauce which, as usual, dominates the dish. The sea bass was really excellent but even there, an anduia sauce, in my opinion, was not suitable as a combination and too strong in flavor compared to the fish, which was delicious in itself but very delicate. Compared to the bread and the various tastings, in my opinion a re-fill should not be requested, but should be appropriately served. Also regarding the starchy foods served at the beginning of the meal, the squid ink breadsticks had not even a remote hint of the sea and the taralli with fiarelli, very good, could have been reserved, or at least offered again (2 are a few) during the meal. The pre-dessert, cute and playful in appearance, contains too acidic a component and can disturb especially at the end of the meal (passion fruit bon bon). Regarding the dessert, I think the pastiera al chalice is good, but as you eat it becomes cloying, firstly in terms of quantity (in this case too generous considering the strong flavor of the pastiera) and secondly because the dessert tends to flatten out as it does not have different consistencies, except the small lozenges of shortcrust pastry placed on the surface. So much bitterness, even though they were sweet, for the small pastry shop, which has always been a protagonist in stellar restaurants. Three mignons, one of which was extremely disappointing (saffron cream puffs, in terms of flavor and consistency) and two others below par. Overall, definitely a good restaurant, but I'm sorry to say I had much higher expectations especially considering the star. I'm not an expert critic but I've tried several Michelin star restaurants and found that there is a lot of room for improvement in certain aspects.
