Be very careful. Counter people are brain dead or taught to rip you off.
This is my second time here. They messed up my first to go order. Today I paid for fried ribs but didn’t get them. The food is good but their service is horrible. I recommend you check your order before you walk away from the counter. They will rip you off.

We came for supper around 7:00 and I ordered a half pound of brisket and a half pound of jalapeno cheese sausage. They were out of sausage so I had smoked Boudin. The brisket was really good, maybe better than Rudy's but nowhere near City Market in Luling. The boudin was dry and I expect it had been cooked much earlier in the day and kept hot thus drying it out. We had been told the sides weren't of top shelf quality and they didn't look too appealing. The pinto beans especially looked as if they had bad been on the warmer all day and were crusty on the edges. My wife enjoyed her chopped beef sandwich. The building was extremely clean as were the restrooms. They had some off brand fancy cola in the fountain machine with none of the standard brands offered. I did not see the deserts to be able to comment. It would appear everything gets cooked early in the day so lunch would be of better quality than the evening meal. How long would it take to cook a few more links of sausage around 5:00 when you see you will be running out?

We had a team event here and they were very helpful in the planning. The food was delicious and they let us use the patio out back for our function. There were some oversized games for fun and the staff was helpful in suggestions from the menu.

Several employees no masks, no gloves while preparing food. 1 no mask, gloves eating meat off tray with bare hands. 1 employee had only 1 glove, no mask while fixing food. Only 1 employee had both mask and gloves. ALL customers had masks. Manager said not required by law. Not sure of this, but even if so, some effort could have been done to protect customers, IMO. Could not eat sandwich.

gotten the ribs twice, dry, tasteless, no fat (that's not good for ribs), tough, sauce thin and watery, does not stick to meat, little to no seasoning. however, decent sandwich w/ 3 meats. Sides are also rather so-so and bland. just my opinion, of course

Ribs, pulled pork, brisket, Mac and cheese all amazing! I love the vibe of this place. Outside is a really fun spot to hang out. Lots of hanging lights, corn hole, and sometimes live music.

Being spoiled to amazing ribs from some great barbeque places back home in Arkansas, I stopped by Paul’s to sample his ribs. Sold by the pound, I got about 5 ribs. Great flavor, just the right amount of pull to get the meat off the bone, and the slaw was tasty too. I’ll be going back to try some of their other meats in the near future.

Myself and two of my friends do lunch every Thursday, so it epwas decided to try Paul’s today. We arrived, parked and entered the restaurant which is decorated very nicely for a barbecue restaurant. On the wall to the right is their menu which ranges from sandwich’s to ribs with several sides. We all chose different entrees with me choosing the brisket sandwich with a side of re beans and rice. Boy was it good with my companions loving their chicken and turkey. They had sides of corn to Mac and cheese with the consensus that all was delicious. This turned out to be a great choice for lunch - great service, good food and not crowded. We almost went and sat outside - great outdoor area too - but it looked like it might rain. Good service, food and atmosphere with the owner Paul checking on us and even busing our table. This is the best barbecue restaurant in town serving food ate pax’s style.

From an idea that developed into a passion and transformed into a brick and mortar slice of bbq heaven, Paul’s is the place for Central Texas Que with a Louisiana twist. If you are not familiar with central Texas bbq tradition it’s time to get schooled. As you walk in to Paul’s personally designed restaurant take a hard right and find your drink in the troughs as you make your way to the menu board. Here you will find bbq offerings from brisket, ribs and chicken to pulled pork sandwiches, sausage, sides and desserts. Walk to the carving area and tell the nice man with a big knife what you would like sliced and as you move down the line your tray is assembled. As you near the end you will find that there are more beverage options in a very cool beverage dispenser as well as pickles, onions, jalapeños etc. if you really must, there is sauce available, but that’s just not the Texas way and it is definitely not needed on this barbecue. Paul’s product is really, really, really good. In fact, we may not need to take so many bbq trail runs into Texas now. You can sit inside but there is a fabulous patio outside that features live entertainment on Fridays and sometimes Saturdays. Since it is fairly new, Paul is evolving the business and finding new ways to entertain and satisfy his customer base. If you are a casual barbecue aficionado you will really appreciate this place. If you are a serious devotee of the barbecue arts you will love the minute details Paul and his staff have obsessed over to bring you their product. The smokers are custom-made and works of art. The rub on the ribs isn’t just good, it is downright delicious. For me, sides with barbecue are sometimes overkill but I particularly liked the smoked bean combination. It was tangy with just a little bite to it and went really well with the meat. The brisket had the telltale smoke ring and the perfect amount of fat to keep it moist and flavorful. Paul makes the rounds of the tables like all good entrepreneurs do and he indicated that he is not stopping to rest on his success. Watch for new things popping up on a regular basis. Can’t say enough good things about this place.
