🤢 2/5 - Overrated, underwhelming restaurant with terrible service

Really an underwhelming experience. The effort you have to go through to even eat here is obnoxious, with the precise opening of the reservation window 21 days in advance. It's not necessary, but it creates the idea of intense demand that the restaurant's hype is based on. I would have probably passed on it altogether because of the hefty deposit in case of no shows, but my wife insisted. There are far better restaurants in Paris that don't have this much fanfare and self-importance.
Nonetheless, on the day of the reservation, we were excited. The space looked amazing and cozy, and not stuffy like one might expect from this kind of restaurant. We tried their house champagne which was stellar, though not in and of itself, a reason to eat here (you can buy it at their wine shop down the street). It was cool that we didn't know what to expect from the meal. As the courses came, it became evident that it's because no one is dying to share pictures of their seaweed salad and an endive that is so bitter that even the server said she hated it. The piece de resistance was pigeon, which after our meager first few courses was kind of a slap in the face. There are restaurants in town serving up lobster, Wagyu beef, veal... So the markup on two salads and pigeon is kind of egregious. The dessert, which was olive oil ice cream, ricotta and citrus fruits was also bitter because of the blood orange. So overall the flavors weren't really doing it for me.
And while I can forgive something not exactly being my taste, the real reason for the 2 star review is that the service was unacceptable for what Michelin considers deserving of one star. If I'm going to a one-star restaurant, I expect the service to be consistently top tier. Instead, we had uneven pacing throughout the meal, with some delays between courses. And when we were done, having declined coffee or another glass of champagne, we waited 30 minutes before we were able to flag someone down for the bill. And then a further 10 minutes for them to come by with the card reader. By the end of the experience, I was pissed about the wait and realizing that I could have better spent my last meal in Paris at a host of other incredible restaurants in the same price range where I could have had high-end cuisine without the lackluster service.
Pass on this. If the people with backpacks eating here are any indication, this is just a tourist trap that draws people in because it's featured on the best whatever list. Not a single French person was dining there in the dozen or so tables in the restaurant. That's a big red flag!
