Michelin 1 star Omakase. Beautifully done.
Sushi shin is a one man show of Chef Jason. He starts prep at 9am everyday for his two nightly seatings. You can see and taste the passion he has towards his restaurant, and towards Japanese cooking. He is also very passionate about his knives, ask him about his collection!. The restaurant has only a small counter for 9 patrons. The door opens at the exact time of your booking. Bookings are done 30 days in advance. We refreshed on Tock right at 10pm, to secure 2 spots on our desired date, and it was very much worth it. Do not expect frills here, you get traditional Edomae preparation, 10 pieces of nigiri sushi with 6 small dishes, 1 chawanmushi, 1 heart warming bowl of miso and 1 dessert. Both my husband and I were full at the end. Some of the notable dishes were : Crab salad appetitizer, Shirobushi dai, Shinko, saury, ototo and uni. The chawanmushi was out of this world. Style wise, it is very similar to Sushi Yoshizumi at San Mateo, which I also adore. Sushi Shin has only one server for the 9 of us, but service was none the less very attentive. 1 star well deserved. We look forward to returning at a different season to savor more food from Chef Jason
