Michelin three-star food in a one-star setting.
Our meal and experience were exceptional! We have dined at many Michelin star restaurants in the US and abroad, and Temporis did not disappoint! It exceeded our expectations. Two of our party of four had been once previously, just after the restaurant opened and before they had a Michelin star. Their previous experience was excellent, and they had wanted to revisit for some time. The room is small, comfortable and charming in an unassuming store-front building. Elegant casual with a relaxed vibe, and friendly, informed and well-trained waitstaff. Service was impeccable and unobtrusive with just the right amount of interaction. The wine-steward/sommelier was well-versed and informative regarding pairings and their rationale. And then the food ... exceptional! If I were to choose one word, it is "balance." Every dish displayed the core philosophy of balance between herbal/savory, sweet, sour, acidic and creamy flavors in an harmonious melange of elements and textures, with a core profile of flavors providing a thread of continuity from start to finish. BRAVO! If any weakness were to be found, it would be in the deserts. They were very good, but we felt they were not quite on par with the rest of the meal. In any case, I would very highly recommend Temporis.

We dined with friends here in May 2022. Overall, it was a lovely experience. Two highlights of the experience: 1. The plating. The food here is art!; each course was gorgeously plated. The vessels are varied and interesting. It's a feast for the eyes as much as the palette! 2. The non-alcoholic beverage pairing. Two of four in our party ordered this, and it was wonderful--each mocktail was gorgeous, the balance in each drink was spot-on, and the flavors were well-matched to the courses. I appreciated that the non-alcoholic pairing wasn't an afterthought (e.g., a bunch of juices). (For the record, the standard wine pairing, ordered by the other two in our party, was also very nice.) The restaurant ticked all of the Michelin-star boxes: delicious and creative food, attentive service, thoughtfully coursed menu, take-home treats, etc. Favorite bites included a wagyu, osetra, and strawberry canape; foie gras (which I often dislike) with blueberry and granola; and beef with hibiscus. A dietary restriction in our party was noted in the reservation and the restaurant did a perfect job with modifications, etc. to suit the restriction. It was a great evening, hence my overall rating. Compared to some other dining experiences of similar caliber (and price) in Chicago (what a great food city!), it was not my favorite, which is not to say anything was wrong with it. The dining room (while lovely) is a bit on the sterile side, service (while excellent) sometimes felt a bit stiff, and the food (while beautiful and tasty) didn't blow me away in the same manner as some other establishments. Desserts were less successful than savory courses. But these are more matters of taste than anything. Overall, a nice evening.

We looked for a Michelin star experience in Chicago and we decided to try Temporis. The experience was extraordinary , with a spectacular food and a good service. From the chief who came to see us and tell us some of the food story, to the person at the entry, everything was done to tell a story and make clients to feel special in a special place. At the end of this experience, we received a nice souvenir box with the food and the wine menu, having the date marked, a tea bag, cookie and a small plant to keep and home and grow. If you look for something different, try it.

My wife and I had a pre-paid reservation (tasting menu and standard full pour wine pairing, via TOCK) for Temporis on a mid-March Thursday night. We were notified the day before, that they had experienced a water leak in the kitchen. We could either cancel or re-book...fortunately (and surprisingly) we were able to secure a seating a week or so later. Temporis has held a Michelin star since 2018, so the availability is surprising.
Ambience: We shook the rain off our umbrellas in the small foyer, and checked those and our coats at the host stand. There are only 20 seats in the restaurant, with wooden tables for two (pushed together for larger parties) and comfortable white fabric chairs. The lighting isn't nearly as dim as many other places that call themselves "fine dining" which is a nice change of pace. It's nice to get a good look at each plate, as the presentation is a large part of any tasting menu. Sheer drapes cover the windows, and parts of the dining room walls.
Food: Our menu consisted of 11 courses, beginning with canapes and ending with four small chocolates. The canapes featured a test tube of tea, a bite sized cracker with a touch of caviar served on a smoked barrel stave, and a dumpling nestled in a spoon. This course featured the most unique plating, the other courses simply used plates, bowls, and glasses.
The website very accurately reflects the menu we enjoyed, so I won't elaborate on each course, but mention surprises or highlights. The "beet" course was very surprising, I'm not a fan of beets by any means, however the flavors and textures of the beets, along with the supporting ingredients, proved excellent. The octopus was enhanced with a 'nduja sauce, which added a touch of subtle spiciness. The lobster dish was a bit disappointing...I couldn't really make out the flavor of the lobster. Along with beets, I don't particulary care for pork belly either, but once again the kitchen exceeded my expectations. Wagyu is on pretty much every fine dining menu, and a wagyu cheek appears here. Unbelievably tender. The two dessert courses couldn't have been more different. The first featured a white chocolate ribbon winding around guava sorbet, and was irresitable. The truffle opera cake was an intense dark chocolate ganache (I think) surrounded by slivers of dark chocolate...it was a little overpowering.
I was curious how often the menu changes - I learned the menu doesn't completely change at once, rather, some new courses replace others, based on seasonality. Not sure when this version of the menu debuted, but it will take around 4 months to completely turn over.
Service: As expected, service was very good. I always find the explanations of each course at fine dining places a little humorous..the phrase "Will this be on the final exam" always comes to mind. Not being a chef or working in the industry, so much of it goes over my head. The pacing of the dinner, once it began, was excellent. It took a surprisingly long time from when the first wine, a nice champagne, was poured, for the canapes to arrive. I suspect the kitchen wanted to keep us on the same cadence as another table, who started their evening with a cocktail. Our servers kept a watchful eye over our table throughout the evening.
Overall Temporis definitely deserves its Michelin star; the ease of obtaining a reservation is surprising. Perhaps the location works against it, as does the fact it has been around for some time (it's not a shiny new thing). Highly recommended.
Loved our experience but not perfect...
Couldn't get into Alinea but wanted to dine at Michelin rated restaurant on this trip to Chicago for my wife's birthday. After looking at all of Chicago's Michelin starred spots, decided on Temporis. We made a great decision! Certainly deserving of their Michelin star!
The meal kicked off with an amuse bouche. Soo good! Wonderful start to a great dinner! It was so good, I jokingly mentioned to the server that I wish I had more. She returned with an extra serving! WoW! I felt special! LoL
We loved every course! Our plates were returned clean! I was expecting a drop off somewhere but they sustained their high quality level throughout our meal!
Alas, not 100% perfect. I noticed two areas of improvement.
They had sprouts mounted in the center of the table. A server explained this was for us to pick on and munch in between courses. Problem is that the server brushed the back of his hairy hand against our sprouts twice. After witnessing this, why would we pick and eat on them? Revisit this concept, please.
One of the dessert courses should be tweaked. While tasted great, i gagged twice on the chocolate powder.
Perhaps, if they addressed such shortcomings, they could earn a second Michelin star?!
But all in all, totally in love with Temporis! When visiting Chicago, you won't be disappointed!
Why only one Michelin star?
I'm not familiar with Michelin's standards for rewarding restaurants with one, two or three stars for culinary excellence. But I am familiar with Patrick O'Connell's Inn at Little Washington in Washington, Virginia, a three-star restaurant. Well, Temporis earned one star in 2018, 2019 and 2021. In my view, it deserves more. Located at 933 North Ashland Avenue in Chicago's West Town/East Village neighborhood, south of Augusta, north of Chicago Avenue, it is everything that a Michelin award winner is supposed to be. It's an intimate, chic setting, only 20 seats in the dining room and only three stools at the bar. As you might expect, reservations are required. Temporis offers a progressive North American cuisine featuring ingredients grown in the restaurant's hydroponic garden, which produces more than 20 items. The staff deserves a bow--proprietor Sam Plotnick, executive chef Troy Jorge, sous chef Wyl Lima, pastry chef Jacquelyn Paternico, captain Laura Bonetti and beverage director/sommelier Don Coen. Multi-course tasting menus are becoming more popular with upscale restaurants and Temporis does it as well as it can be done with a 10-course menu priced at $175 which includes Wagyu, foie gras, tomato, lobster, corn, squab, A5 Wagyu ribeye, yuzu, coconut with passion fruit and white chocolate and more chocolate. Previously, we were delighted with a $165 tasting menu that included black bass, duck, venison and Wagyu ribeye. We're told that the late opera legend Luciano Pavarotti, known for his huge appetite and love for good food, once spent an entire evening at Temporis and enjoyed every calorie. He always knew a good thing when he tasted it.

Hands down my favorite restaurant,tasting menu & Michelin star place in the city. Mind blowing dishes from the most talented chef I’ve ever encountered. I discovered Temporis during the pandemic & quickly named them my favorite takeout restaurant however it was after I returned for their tasting menu it’s when I fell in love. Unorthodox but exquisite dishes. On this particular visit I was in awe of the “osetra caviar” but this place has tons of dishes that will remain in & haunt my memories. You can’t do better & Chicago & did I mention this is one of the cheapest tasting menus & Michelin star places in the city.

Temporis - Great Tasting Menu and Wines
In April, we returned to Temporis, at 933 N Ashland Ave. This was our second visit there. Though Temporis is located in a commercial/industrial area and building, the illuminated “Temporis” makes it easier to find, than some similar restaurants. We also had the advantage of dining there - but still, make sure to have the 933 (also illuminated) N Ashland Ave address..
The interior had not changed, as far as I could discern. It still had a decidedly Asian influence, and part of that was likely due to the minimalist décor. Lovely, in its own right, and not as stark, as I might make it seem.
Our table was rather large for a 2-top, with a cutout in the middle, which was soon filled with fresh herbs, so that one could “graze,” at their leisure – I still find this concept an interesting touch, both from a culinary, as well as visual standpoint. The tables are well-spaced, and the lighting nice - dark throughout the room, but with adequate task lighting above the table, so as to enjoy the beautiful presentations to come. There is a small bar, with 3 stools, to the rear of the small dining room..
Again, we opted for the Tasting Menu, and one each of two of their Wine Pairings. This had worked so very well, that we repeated the order, and were once more rewarded. When possible, we do split the wine pairings, so as to have two different wines per dish.
The Seasonal Tasting Menu changes, and sometimes daily, predicated on what the chef is able to find fresh at market. Our “Spring” Tasting Menu, differed from our “Autumn” Tasting Menu before, and might possibly have differed from what was served the night before. Each dish, from the Amuse Bouche to the finishing Dessert Course was excellent, and both tasty as well as a piece of culinary art to behold. Some were almost too beautiful to eat - one wanted to just gaze upon it.
Another aspect of our dinner, that impressed me, was the different pieces of dinnerware, for each dish - lovely to behold and creative. My wife wants to work for Temporis, just buying the interesting dinnerware!
I liked that the stemware for each wine course was excellent, and each stem varietally specific - always a nice touch, and one that indicates that the sommelier (we encountered two this night), took great care in selecting them. I also found that the sommeliers decanted those wines requiring it, appropriately, and too many miss this aspect of the wine service. Job well-done.
During the course of the evening, the pacing was perfect, without any pauses, and no sense of a rush - just perfect.
If anything, this visit was even more perfect, than the first, and I was not sure that was even possible. We hope to work Temporis into our future dining plans, and especially as my wife’s corporate office has moved to Chicago, and we are there, almost every month, or even more often.
WOW! Every bite simply WOW!
Three of us enjoyed a phenomenal meal and left wondering why this place had only one Michelin star. It deserves more!
We had the exceptionally delicious 11 course tasting menu with the reserve wine paring. Every course was amazing with perfectly pair wine. And they creatively varied the course for both the person with a shellfish alergy and the person who could not eat tomatoes. We cannot highlight any specfic dish because they were all outstanding.
The service was was equally fabulous.
Highly recommend that you try this delightful place.
Incredible Food
My wife and I visited Temporis for her birthday. It's a very small restaurant with a capacity of 20-25 diners. The decor is minimalist and modern with comfortable tables and chairs and nice lighting. The wait staff was professional and attentive. The food was fabulous with fairly large portions for a tasting menu. Everything we ate was delicious. There were no strong flavors; even the caviar was subdued. The wine flight was well paired and very good, but I think the wine overall was overpriced and I didn't see a need for a small-pour option. Highly recommended. We'll be back.

This was my second time and we went for my birthday. It was even better than the first time which was immediately after opening. Very colorful and tasty dishes. Love to go back again.

Temporis was phenomenal in every aspect! The food was innovative, delicious and well prepared. The staff were fantastic and attentive. Temporis seriously takes your palate to the next level! My only recommendation would be to give Temporis two Michelin stars instead of one!!

Dined at Temporis during a quick trip to Chicago and was thoroughly impressed by the experience. Very intimate restaurant with only 20 seats. Service, food, ambiance were all fantastic. We have dined at other Michelin starred restaurant (1-3) and Temporis had the most consistently well prepared/presented food of them all. All of the staff was welcoming and well informed. Every course was perfectly balanced and well paired with the wines. They love what they do and I can’t wait to see where they go! Excellent value for an amazing meal
