In short: real Italian cuisine: fly to Italy and back for the night while in the comfort of the beat view of Vegas... if you’re into standard spaghetti bolognese and lasagna, don’t come here! And don’t complain about the fact that this is not your usual American-Italian restaurant!
Overall menu: I like a restricted menu, it shows the chef is trying to do a few things as well as he can rather than lots of things on average level. Here this is well done: a selection for everyone yet well focused. A tasting menu is available if you wish.
Setting: really hard to beat: even if you were on a rooftop on the strip you would lack the perspective this location permits: just stupendous
Food quality: fantastic flavors smoothly mixed with slow cooking. All pasta started not just from scratch but from grain: that is superior level pasta making and flavor...
Food quantity: at last a nice restaurant that has gauged it properly: not too little, not too much, just perfect size. Note: pastas are NOT main dishes but in between dishes- as they should!
Mood: relaxed chic, you can feel comfortable no matter what the occasion
Service: excellent but a few surprising technical errors: got the side of bread plates wrong and removed plates too early while other guests are still eating... but these were all committed by the same server so... oups!
Bread, butter and water are always the best baseline for a restaurant: here they score big time with amazing focaccia with salted crust, flowery olive oil and a selection of flat or mineral water included
What I had...
Pouligny-Montrachet 2016 half bottle: served at perfect temperature, always a fantastic white...
Hamachi crudo with lemon: soft gentle flavors, lovely vinaigrette, refreshing, could have a bit more of a kick but great
Lobster tomato fusilli: very interesting delicious and hearty; well-done mix of lobster with tomato - unusual sonceost chefs use butter or cream with lobster.
Almond with truffle butter: just perfect simplicity with rich delicate flavors, very very well done
Pistachio flan: amazing creativity on the flan, but chocolate ice cream? I don’t get it... it calls more for a vanilla or ginger granita... or nothing else! It is sooooo good! Way too american for what the flan deserves... respect and have faith in your creation: be bold and let it be! Here less is more!
Espresso: a real one with awesome crema and with home made biscotti, welcome to Italy
Price point: high quality food, location, service: appropriate for what it is. This being said it is considered an expensive restaurant, i spend 180 USD for my meal listed above. On par with other equivalent restaurants in NYC, Chicago, Toronto, Vancouver, etc. Only cheaper place would eb Montréal! 😂
For me a great restaurant, no matter the expense or style needs to have three elements that work together and enrich each other in balance: Service, Setting, Food. Too much or too little of one and they are off... here they hit it right on and I think they deserve 5 stars. If they push it a bit, especially on service, they may get a Michelin some day... something to work towards...
